MARTIN DAVIES – THE SHORE CLUB Director of Operations, Food and Beverage and Executive Chef If Martin Davies’ bio read like a menu, it would be extensive, almost to the point of overwhelming; wildly inventive, sprinkled with Michelin stars, and impossibly tempting – you would want everything! Born in England, and classically French trained, Chef Davies has spent years working in London, Paris, New York City, The Caribbean, and the Maldives. Davies honed his seafood culinary skills working alongside notables including the Roux Brothers, Anton Mosimann, Alian Ducasse, Rocco di Spirito and Mahew Kenny. Along the way, he has been constantly developing his distinctive interpretation of Pan Asian, Italian, and ‘European’ cooking styles, which he now brings to The Shore Club as Director of Operations, Food and Beverage and Executive Chef. Chef Davies started his career at Le Gavroche in London, a Michelin star restaurant. From there, he moved to The Savoy, Mosimmans, The Dorchester (more Michelin stars!), and China Grill in both London and New York, where he received the prestigious James Beard award. Along the way, he also spent three months as the Sultan of Brunei’s personal chef in Kensington and Windsor, and catered numerous private events including Wimbledon and Royal Ascot. And then, the Caribbean called. Davies became Executive Chef at the Regent Palms, Turks and Caicos, followed by stints at the Grace Bay Club, Coyaba and Parrot Cay, where he was named Chef of the Year, Turks and Caicos Islands, in 2013. Prior to joining The Shore Club, he was Executive Chef in charge of Food and Beverage at the Six Senses Resort and Spa in the Maldives. In addition to his numerous awards, Chef Davies brings an interest in integrating wellness and nutritional guidelines into his wizardry in the kitchen. Visitors to SUI-REN, Sea Grapes and Colonnade can look forward to the freshest seafood and organic produce served up in a style unique to The Shore Club.
