SERVES 4 FOR THE PRESSED WATERMELON 1 small watermelon, cubed ½ cup port wine ½ cup olive oil 1 bunch fresh mint 1 tbsp black pepper, fresh cracked 1 tbsp salt, kosher FOR THE FETA 2 cups good quality feta cheese, cubed 1 tbsp anise seeds, crushed 1 lemon, zested 1 cup olive oil 1 tbsp black pepper, fresh cracked FOR THE PORT VINAIGRETTE ¼ cup balsamic vinegar 2 tbsp port wine 2 tbsp olive oil ¼ cup pistachios Salt and pepper to taste FOR THE GARNISH ½ cup roasted, salted pistachios Micro greens – lemon basil and micro thyme METHOD 1. Marinate watermelon cubes with all ingredients listed. 2. Place marinated watermelon cubes into ziplock bag making sure to remove extra air, refrigerate overnight. 3. Marinate feta cubes, and refrigerate overnight. 4. Prepare vinaigrette by placing nuts and olive oil into a Vitamix, blend until smooth, whisk in by hand balsamic, port and seasoning. 5. Assemble the dish with equal parts watermelon and feta, drizzle with vinaigrette, good quality olive oil, roasted pistachios and micro greens.
